1.Preheat oven to 180°C (160°C fan-forced). Grease 20cm (8-inch) springform tin; line base and side with baking paper.
2.Beat butter, rind, sugar and egg yolks in small bowl with electric mixer until light and fluffy. Transfer mixture to large bowl. Stir in sifted flour and milk, in two batches.
3.Beat egg whites in small bowl with electric mixer until soft peaks form; fold into cake mixture, in two batches. Spread mixture into pan; sprinkle with nuts.
4.Bake cake about 50 minutes. Stand cake in tin 10 minutes before turning top-side up onto wire rack to cool.
Traditionally, a coin would be inserted into the mixture before baking so that the person who found it would have good luck for the coming year. If you want to do this, wrap the coin in foil first (and perhaps warn your guests).
