Method
1.Preheat oven to moderate, 180°C. Lightly grease and line a 20cm square cake pan with baking paper.
2.In a bowl, using an electric mixer, beat spread, sugar and golden syrup together until pale and creamy. Beat in eggs and lemon zest.
3.Fold flour and milk through, until just combined. Pour mixture into pan. Bake for 40-45 minutes, until cooked when tested with a skewer. Cool in pan 10 minutes.
4.ICING: Beat spread and sugar together, followed by icing sugar and milk.
5.Spread or drizzle icing over cooled cake. Store in an airtight container.
Buttermilk is lower in fat than milk, but you can also use skim milk.
