White-choc layer lamingtons

This lamington recipe is a taste of dessert heaven! Caramel lamingtons are sandwiched together with whipped cream and Mars bars, then topped with white chocolate. Drool!

Method

Lamingtons

1.Preheat oven to 180ºC. Lightly grease and line a 20cm square pan.
2.In a bowl, using an electric mixer, beat butter and caster sugar together until creamy. Add eggs, one at a time. Beat in vanilla extract. Lightly fold sifted self-raising flour into creamed mix, alternately with milk.
3.Spoon into pan and smooth top. Bake for 30-35 minutes until cooked when tested. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely. Trim edges and cut into 9 squares.

Caramel icing

4.In a pan, combine brown sugar, chopped butter and milk. Stir on low until sugar dissolves. Simmer for 2 minutes, stirring. Remove from heat.
5.Whisk in sifted icing sugar. Keep warm. Reserve ½ cup. Spread shaved white chocolate over a shallow tray.
6.Using a fork, dip cake pieces into icing, draining off excess. Roll in chocolate to coat. Place on a wire rack and allow to set.

To serve

7.Split cakes and sandwich with whipped cream and chopped Mars bars. Drizzle with reserved sauce.
  • Keep the dipping icing over warm water to make it easier to dip.
