Uncrumbed chicken parmigiana

The combination of melted cheese, fresh basil and tomato sauce adds an extra layer of flavour to your delicious chicken breast. Enjoy it warm fresh out of the oven for a no-fuss dinner.

Method

1.Preheat oven grill to hot, 220°C.
2.Heat oil in a large frying pan on medium. Fry chicken for 2-3 minutes each side, until the meat is starting to colour and almost cooked through.
3.Transfer to a baking dish. Spread each schnitzel with 1 tablespoon passata. Top with spinach or basil leaves and sprinkle with combined cheeses.
4.Grill for 3-4 minutes, until cheese is melted and golden. Serve with rocket leaves and cherry tomatoes, drizzled with a little olive oil.

You can use your favourite pasta sauce or leftover pesto in place of passata.
