Method
Turkey breast with cranberry and mustard sauce
1.Preheat a char-gill or barbecue on medium.
2.Place turkey breast in a large bowl with the oil. Season to taste and toss to coat.
3.Preheat oven to moderate, 180°C.
4.Char-grill breasts for 4-5 minutes each side until browned. Transfer to baking dish. Cover with foil. Bake for 35-40 minutes until cooked through.
5.Meanwhile; make Cranberry and mustard sauce. (See recipe below)
6.Slice turkey, top with sauce and serve with oven-baked potato wedges and salad.
Cranberry and mustard sauce
7.In a medium saucepan, combine all sauce ingredients except the butter.
8.Stir over a low heat until the sugar dissolves. Bring to the boil.
9.Simmer for 20-25 minutes until sauce thickens. Remove from the heat and stir through butter.
Turkey breast prepared this way is also delicious tossed through salads or used in sandwiches.
