1.Preheat oven to moderate, 180°C (160°C fan-forced). Line 2 baking trays with baking paper.
2.Melt spread and golden syrup in a saucepan over low heat. Remove from heat. Add sugar; stir until dissolved.
3.Dissolve bicarbonate of soda in hot water. Add to saucepan; stir (mixture will froth). Add flour, coconut, cranberries, pepitas and muesli; stir to combine.
4.Place level tablespoons of mixture on prepared trays, 4cm apart, to allow for spreading.
5.Bake, swapping trays halfway through cooking, 18-20 minutes, or until golden. Transfer to wire racks to cool. Serve.
We used an oval measuring spoon to shape mixture.
