Method

1.Preheat oven to 160°C.
2.Place each piece of fish on a 30cm square piece of baking paper.
3.To make marinade, combine all the ingredients in a small bowl. Spoon a little over fish, reserving 1 tablespoon.
4.Gather corners of paper together, tying with string, to make loose parcels. Place on an oven tray. Bake 12-15 minutes, until fish flakes easily when tested with a fork.
5.In a small saucepan, combine coconut milk, sugar and reserved marinade. Stir over low heat until sugar dissolves. Simmer 2 minutes. Stir in juice.
6.Serve fish with sauce, and sprinkle with extra chilli and coriander. Accompany with steamed greens.
