Method
1.Combine pork with remaining ingredients. Cover and marinate 1 hour in the fridge.
2.Preheat oven to 180°C. Place ribs on a rack over an oven dish lined with baking paper and reserve excess marinade. Cover ribs with foil. Bake 2 hours.
3.Pour reserved marinade into a small saucepan, adding any pan juices from under ribs. Bring to boil and simmer 4-5 minutes until reduced and thickened.
4.Make the paprika corn. Place each piece of corn on a piece of foil. Dot with butter and season to taste. Sprinkle with paprika. Wrap foil over. Bake with ribs 30 minutes until tender.
5.Increase oven to 220°C. Remove foil and baste ribs with half thickened marinade. Bake 20 minutes, basting with remaining marinade, taming once.
6.Cut ribs into sections and serve with corn, salad and lime wedges.
