Method
1.Combine chicken fillets and marinade in a bowl. Toss to coat well. Set aside 15-20 minutes, to marinate.
2.Place potatoes in a microwave-safe bag and microwave on high 8 minutes, until tender. Place cooked potatoes in a baking dish; crush lightly with a fork. Add olives, lemon rind, oil and thyme leaves. Season. Toss to combine. Place under a preheated grill 5 minutes, until golden.
3.Meanwhile, heat a lightly oiled char-grill on medium-high. Cook chicken 4-5 minutes each side, until crisp and cooked through. Serve chicken with crushed potatoes and thyme sprigs.
