1.Heat the oil in a deep large frying pan over a medium heat. Add the mustard, cumin, white pepper and turmeric. Cook, stirring, for a few minutes, or until the spices are aromatic.
2.Add the garlic and onion; cook, stirring, for further 8-10 minutes or until the onion is soft and golden. Add the tomato; simmer, covered, for a further 10 minutes. Season to taste with sea salt. Add the parsley just before serving.
3.Meanwhile, grill or barbecue sausages until just cooked through.
4.Serve tomato mixture with sausages, potato and extra parsley.
