Marinated pork fillet is lightly char-grilled and served with charred pineapple, jasmine rice and fresh coriander for this deliciously tasty dish

Method

Pineapple spiced barbecue pork

1.Place pork in a glass bowl. In a jug, whisk juice, sugar, sauces, oil and spices together. Pour half the marinade over pork and coat well.
2.Pour remaining marinade into a small saucepan. Simmer for 3-4 minutes, stirring often, to thicken slightly.
3.Preheat a char-grill pan or grill on high. Brush with oil. Cook pork for 10-12 minutes, turning, until just cooked through. Rest pork, loosely covered with foil, for 5 minutes.
4.Grill pineapple for 2-3 minutes each side until light marks appear.
5.Thinly slice rested pork. Serve on a bed of rice with pineapple. Spoon sauce over and scatter with coriander.

✦ For a nice crunch, sprinkle with toasted chopped peanuts.
