Method

1.Preheat oven to 210°C/190°C fan forced. Lightly grease a baking tray; dust with flour.
2.Sift flours, bicarbonate of soda and salt into a large bowl. Return husks to bowl. Rub in butter to make fine crumbs. Make a well at centre; pour in buttermilk.
3.Bring mixture together to form a soft bail. Turn dough onto floured surface; knead for 5 minutes or until smooth.
4.Using floured hands, shape dough into 6 loaves (about10x7cm each). Place on prepared tray. Score top of each loaf; sprinkle with chilli and salt flakes.
5.Bake for 10 minutes. Reduce oven temperature to 190°C/170°C fan forced. Bake for 10 minutes more or until bread sounds hollow when tapped. Serve warm with tomato chutney and cheese.

To make wholemeal self-raising flour, sift together 2 teaspoons baking powder and 1 cup wholemeal plain flour; return husks to the mixture. Buttermilk is in the dairy section.
