Method
1.Preheat oven to moderate, 180°C.
2.Heat a large frying pan on high. Cook sausages for 4-5 minutes, turning, until golden all over. Transfer to a 20 x 30cm shallow baking dish.
3.Sauté‚ celery, onion and garlic in same pan on high for 2-3 minutes. Stir in passata, zucchini and eggplant and season to taste. Bring to the boil. Pour over sausages.
4.Cover dish with foil and bake for 10-15 minutes. Top with olives and parsley. Serve with mashed potato.
This dish is also delicious topped with a mixture of 1/4 cup grated parmesan, 2 tablespoons dry breadcrumbs and 2 tablespoons shredded basil before baking.
