Sausage and vegetable bake

Nutritious and incredibly scrumptious, this sausage and vegetable bake recipe is simple and easy to make. Loaded with fibre, this quick meal is very filling, creating the perfect midweek meal.

Method

1.Preheat oven to moderate, 180°C.
2.Heat a large frying pan on high. Cook sausages for 4-5 minutes, turning, until golden all over. Transfer to a 20 x 30cm shallow baking dish.
3.Sauté‚ celery, onion and garlic in same pan on high for 2-3 minutes. Stir in passata, zucchini and eggplant and season to taste. Bring to the boil. Pour over sausages.
4.Cover dish with foil and bake for 10-15 minutes. Top with olives and parsley. Serve with mashed potato.

This dish is also delicious topped with a mixture of 1/4 cup grated parmesan, 2 tablespoons dry breadcrumbs and 2 tablespoons shredded basil before baking.
