Method
1.Heat oil in a large frying pan; cook salmon, skin-side down for about 5 minutes. Turn salmon; cook for 3 minutes or until cooked as desired.
2.Meanwhile, peel and finely chop onion. Combine onion and cream in a small saucepan; simmer, uncovered, 8 minutes. Whisk combined cornflour and the water into cream mixture. Simmer for 2 minutes or until sauce has thickened slightly. Stir in dill.
3.Top each salmon fillet with sauce and a sprig of dill.
