Method

1.Preheat oven to 240°C. Finely chop enough fresh mushrooms to fill 1/3 cup and quarter remaining mushrooms.
2.Melt 20g butter in a medium, non- stick frying pan on medium heat. Sauté eschalots and garlic for 1 minute. Add finely chopped mushrooms and thyme, and sauté‚ for 2 minutes. Remove mushroom mixture from heat and mix in 60g butter. Stir in lemon juice and season to taste.
3.Arrange prawns in a single layer in a lightly oiled baking pan. Spoon mushroom mixture over prawns and bake for 5 minutes. Turn prawns over and bake for another 5 minutes.
4.Meanwhile, heat remaining butter in a large frying pan on high. Add quartered mushrooms and cook for 3-4 minutes, until golden. Season to taste.
5.To serve, arrange prawns in serving dishes and spoon over Mushroom Butter.

Swiss brown mushrooms have the perfect flavour to complement the prawns.
