Ingredients: 480 gram butter cake (or madeira cake); 2 tablespoon raspberry jam; 1/4 cup double thick cream; icing sugar, to dust; Glace icing; 1/2 cup icing sugar mixture, sifted; 3 teaspoon milk; 1/2 teaspoon vanilla extract; 1/2 teaspoon soft butter; a few drops pink food colouring

Ingredients

480 gram butter cake (or madeira cake)

2 tablespoon raspberry jam

1/4 cup double thick cream

icing sugar, to dust

Glace icing

1/2 cup icing sugar mixture, sifted

3 teaspoon milk

1/2 teaspoon vanilla extract

1/2 teaspoon soft butter

a few drops pink food colouring

Method

1.Trim edges of cake; cut into 12 x 1cm-thick slices. Using a 6.5cm heart-shaped cutter, cut a heart from each slice of cake.

2.Spread jam and cream over 6 cake pieces. Top with remaining pieces to sandwich together.

3.To make glace icing, combine icing sugar, milk, vanilla and butter in a heatproof bowl. Stir over a saucepan of gently simmering water until icing is smooth. Tint with food colouring.

4.Spoon icing over cakes. Dust with icing sugar when set.
