Method
1.Using a 6cm cutter, cut bread into 24 rounds. Using a food processor blitz prawns, onion, ginger, coriander, egg white, cornflour, soy sauce and sesame oil until almost smooth. Season with salt and white pepper.
2.Place sesame seeds on a plate. Spread one side of each bread piece with prawn mixture. Dip bread, prawn-side down, in seeds to coat.
3.Heat oil in a large heavy-based saucepan over moderate heat (oil is ready when a cube of bread crisps quickly without absorbing oil). Deep-fry bread, in batches, for 1-2 minutes or until golden and cooked. Using a slotted spoon, transfer toast to paper towels to drain. Serve with plum sauce.
Instead of prawns, you could use chicken thigh fillets. If you don’t have a round cutter, cut bread into small triangles. To discard oil, cool completely then place in a plastic bag and discard. Never pour oil down the sink.
