Prawn fried noodles is a dish that’s not too spicy but still has plenty of zing. This style of noodle dish, where curry flavours are combined with seafood and egg noodles, is popular in Singapore.

Method

1.For the sauce, whisk all the ingredients together in a small bowl or jug until combined.
2.Heat oil in a large pan or wok. Add onion and capsicum. Cook for 2-3 minutes, then add the spring onion. Stir-fry for a few minutes until the vegetables soften and colour.
3.Pour in the sauce and simmer for 3-4 minutes to allow the flavours to develop and the sauce to thicken slightly.
4.Add the noodles and prawns, toss in the sauce and keep them moving in the pan until the noodles are heated through and the prawns are cooked. Splash in a little water as you go to “loosen” the sauce if it looks too dry.
5.Serve in bowls garnished with peanuts, chilli and coriander, and a wedge of lime or lemon.
