Method
1.Place potatoes in a large saucepan, cover with cold water. Bring to the boil. Boil 10-15 minutes, or until tender. Drain well. Cool. Cut potatoes into quarters.
2.Meanwhile, make cocktail sauce: whisk ingredients in a medium bowl until combined. Season.
3.Combine potato, lettuce. prawns and avocado in a large bowl. Spoon into serving glasses. Serve drizzled with cocktail sauce.
To save time, cook potato and make dressing several hours ahead; assemble just before serving.
