Method

Peanut butter & jelly drops

1.Preheat oven to moderate, 180°C. Line two oven trays with baking paper.
2.In a bowl, using an electric mixer, beat butter, peanut butter and sugar together until smooth and creamy. Add egg, beating until just combined. Stir in the combined sifted flour and baking soda.
3.Roll level tablespoons of mixture into balls. Arrange on trays 5cm apart and press in a lightly floured finger (or the end of a thickish wooden spoon) to make an indentation in the centre of each cookie. Flatten slightly with floured fingertips. Spoon about ½ teaspoon jam into the centre of each cookie (it should be just level with the top).
4.Bake for 12-15 minutes until golden. Cool completely on trays. Store in an airtight container.

Try using crunchy peanut butter instead of smooth for added bite.
