1.Preheat oven to 180°C/160°C fan-forced. Line a baking tray with baking paper.
2.Arrange tortillas on tray. Spray with oil and sprinkle lightly with seasoning mix. Bake for 5-10 minutes, or until crisp. Allow to cool.
3.Meanwhile, to make guacamole, in a bowl, lightly mash avocado. Mix in remaining ingredients. Set aside.
4.Break tortilla chips into bite-sized pieces and arrange in a medium-sized ovenproof dish. Spoon salsa over chips followed by beans, olives and cheese. Bake for 10-15 minutes, or until cheese melts.
5.Serve nachos topped with guacamole, sour cream, sweet chilli sauce to taste and coriander.
If you prefer, or if you’re rushed for time, use ready-made corn chips. You could use a chopped chilli in place of the chilli sauce.
