Method

1.Preheat oven 200°C (180°C fan-forced). Line a baking tray with baking paper.
2.Place mince, onion, zucchini, sauces, egg and breadcrumbs in a medium bowl. Using clean hands, mix until well combined. Shape into 2 oval meatloaves. Place on prepared tray.
3.Wrap each loaf with bacon; secure with toothpicks. Place tomato on tray with meatloaves: drizzle with oil and sprinkle with freshly ground black pepper.
4.Bake for 20-25 minutes or until meatloaves are cooked. Remove toothpicks. Serve with roast tomato, mashed kumara and peas.

You could add grated carrot or kumara to the mince mixture.
