Ingredients

Method

1.In a small non-stick frying pan, dry fry spices on medium heat for 2-3 minutes, until fragrant. Set aside to cool.
2.Pound spices to a fine powder in a mortar and pestle. Stir in 1 tablespoon oil. Season to taste. Rub over meat. Marinate for 20 minutes.
3.Preheat char-grill or large oiled frying pan on high. Cook lamb for 3 -4 minutes each side, until cooked to taste. Cover and set aside to rest for 10 minutes.
4.In a large bowl, toss rocket, lime juice, and half remaining oil together. Season to taste.
5.Layer dressed rocket, lamb fillet and yoghurt on Lebanese bread. Roll each to enclose filling. Secure with a toothpick.
6.Brush with remaining oil and char-grill, 2 at a time, 1 minute each side until golden and crunchy. Serve sliced, secured with toothpicks.

Make these ahead of time and chill until ready to serve. Char-grill, slice and serve.
