Method

1.Scrub mussels; remove beards.
2.Heat butter, garlic and chilli in a large saucepan, stirring, until fragrant. Add wine; bring to the boil.
3.Add mussels to the pan; simmer, covered, 3 minutes or until mussels open, shaking pan occasionally. Stir in half the parsley. Serve mussels scattered with remaining parsley.

You can buy cleaned mussels to save time. Recipe is best made just before serving.
