1.In a bowl mix tamari or soy, chillies, ginger, honey and 1 tablespoon oil, adding a few pinches of sea salt. Add tofu and turn to coat with marinade. Marinate tofu for 30 minutes, spooning over a little marinade from time to time.
2.Trim bok choy, shaving off most of the greenery. Cut each into quarters or eighths if large. Wash thoroughly under running cold water then pat dry with paper towels.
3.Heat a non-stick frying pan over medium heat. Splash with ½ tablespoon oil. Add drained tofu cubes to the pan – reserve marinade – and cook until golden brown on both sides; keep an eye on them and don’t let them burn.
4.Heat a wok over a medium heat, add 1 tablespoon peanut oil and let the oil get hot. Add bok choy and stir-fry for 3 minutes. Dilute reserved tofu marinade with water and add to wok. Cook for a further 1-2 minutes, until bok choy is just starting to soften; watch it – if you go too far it will lose crunch and become soft and watery.
5.Dish the bok choy into a heated bowl and top with tofu. Sprinkle with sesame seeds and serve with extra tamari or soy sauce and lime wedges.
