Method
1.Cut chicken in halves. Dust in flour, shaking off excess. Dip into combined egg and milk, then coat in combined oats and paprika. Chill 15 minutes.
2.Meanwhile, heat oil and half butter in frying pan on medium. Cook chicken 2-3 minutes each side, until golden. Drain on paper towel.
3.Melt remaining butter in frying pan on high. Sauté silverbeet 4-5 minutes, until wilted. Serve chicken with silverbeet and lemon wedges.
Place chicken between two pieces of plastic wrap and use a meat mallet or rolling pin to pound until 5mm thick.
