Fast madeira loaves
1.Preheat oven to 180°C. Lightly grease eight recesses of a mini (2/3-cup) loaf pan. Line bases and long sides with baking paper, extending 2cm above edges.
2.In a food processor, combine all ingredients except sultanas and jam. Pulse until just combined. Transfer to medium bowl. Stir in sultanas.
3.Divide mixture evenly among recesses. Bake 15-20 minutes, until cooked when tested. Cool in pan 10 minutes before transferring to a wire rack to cool completely.
4.Brush warm cakes with jam.
If you prefer to mix the cake batter using an electric mixer, start on low speed to just combine ingredients, then increase to medium for 1 minute. For best results, be careful not to overbeat.
