Method

Soak noodles in cold water for 20 minutes. Cover mushrooms in boiling water and set aside to soften.

In a wok or large frying pan, heat oil on high. Stir-fry sausage and onion for 3-4 minutes, then add garlic, ginger, curry powder and salt, stir-frying for 2-3 minutes until fragrant. Stir in prawns, spring onion, soy sauce and drained mushrooms.
3.
Toss sweet chilli sauce and sesame oil through drained noodles. Top with extra shredded spring onion and accompany with lime.
Note
- This is a great dish for finishing off leftovers. Use up any vegetables of choice and add chicken.
