Method
1.Heat large frypan on medium heat, spray with oil. Cook duck 5-6 minutes, skin side down, then turn and cook for a further 3 minutes. Rest, loosely covered with foil, 10 minutes. Slice. Set aside.
2.Heat oil and butter together in a saucepan on medium. Saute onion 2-3 minutes. until tender.
3.Add bay leaves and cloves, stirring 1 minute until fragrant.
4.Mix in plums, reserved juice, sugar and zest and bring to the boil. Reduce heat to low and simmer 10 minutes. Season to taste. Serve sliced cooked duck with plum sauce.
