Crumbed prawns with pasta

Crispy, crumbed prawn cutlets are beautiful tossed with oven roasted pumpkin, creamy feta cheese and fresh piccolini to create this tasty pasta dish for a delicious family dinner.

Method

1.Preheat oven to 200°C (180°C fan-forced). Line 2 baking trays with baking paper.
2.Place prawns on one prepared tray; place pumpkin on the other prepared tray. Drizzle half of the oil over pumpkin; toss to coat. Bake prawns and pumpkin 15-20 minutes, or until prawns are golden and pumpkin tender.
3.Bring a large saucepan of salted water to the boil. Add pasta. Cook 10 minutes, or until tender. Drain; return to pan. Add remaining oil, onion, garlic, tomato, juice, prawns, pumpkin, rocket and feta. Season with salt and pepper. Toss to combine. Serve.

You can use any short pasta for this recipe.
