Crispy oyster mushrooms

This Asian-style dish makes a great starter, side or crunchy finger food.

Ingredients

Method

1.Dust mushrooms lightly in flour, shaking off excess. Then dip into combined milk and egg.
2.Coat mushrooms with breadcrumbs, making sure you press them on firmly. Transfer to a plate and chill for at least 20 minutes.
3.Heat enough oil for shallow frying in a large frying pan on medium, until a small piece of bread sizzles immediately when added.
4.Fry mushrooms in 3 batches, for 1-2 minutes, turning, until golden. Drain on paper towel. Keep warm. Serve garnished with snow pea sprouts and accompanied with salad, sweet chilli sauce, and lime wedges.

Oyster mushrooms can be found in major supermarkets and Asian food stores. The more common button mushroom can be used instead. Panko crumbs have a crisp, airy texture and are found in the Asian section of the supermarket.
