1.Preheat oven to 200°C (180°C fan forced). Place a baking tray in the oven to heat. Grease a 20cm square cake pan.
2.Using hands, combine mince, tomato paste, carrot, onion, egg yolk and breadcrumbs in a bowl. Season. Firmly press mince mixture into prepared pan, level surface.
3.Combine potato, thyme and bechamel in a bowl. Season. Layer potato mixture evenly over top of mince mixture. Cover with a piece of baking paper, then foil.
4.Place dish on hot tray in oven; bake for 50 minutes or until potato is almost tender. Remove from oven; discard baking paper and foil. Sprinkle top with cheese. Return to oven; bake for 30 minutes or until golden and cooked when tested at centre with a skewer. Stand in pan for 5 minutes. Sprinkle with extra thyme. Serve meatloaf sliced, with salad leaves.
Use a mandolin or V-shaped slicer to thinly slice potatoes. This will also ensure they cook evenly.
