Method

1.Preheat oven to 180°C. Line 2 large baking trays with baking paper. Place cheeses and butter into a bowl. Using fingertips, rub together. Mix in egg well.
2.Sift flour and cayenne together into puller mixture. Add chives and mix with a wooden spoon until dough just comes together.
3.Turn dough onto a lightly floured surface. Knead until smooth. Wrap in plastic wrap and chill until firm enough to handle. Break dough into 8 portions, and roll into long sausage shapes. Cut into 11cm pieces. Arrange on prepared trays.
4.Bake for 15-20 minutes, until golden. Cool on trays for 5 minutes before transferring to a wire rack to cool completely. Store biscuits in an air tight container for up to 4 days.

You can use Emmenthal or Swiss cheese in this recipe. Serve biscuits with cheese, chutney and dried fruit.
