1.Preheat oven to 180°C/160°C fan-forced. Line a 12-hole (1/3-cup) muffin tray with paper cases.
2.Sift flour into a large bowl. Add butter, sugar, dried fruit, egg, honey, carrot, apple, zest and juice; stir until just combined (don’t over-mix). Spoon into prepared holes; sprinkle with pepitas.
3.Bake for 20-25 minutes or until a skewer inserted at centre comes out clean. Remove from oven. Stand in tray for 5 minutes. Transfer to a wire rack to cool. Serve dusted with icing sugar.
You can use any combination of dried fruit you like. Makes 12
