Method
Caramelised fig, orange and fennel salad
1.Make orange and honey dressing.
2.In a large bowl, coat figs with dressing, gently turning. Remove figs from dressing; reserve dressing.
3.Cook figs on heated oiled barbecue (or grill or grill pan) until caramelised.
4.Using a mandolin, V-slicer or sharp knife, slice fennel thinly. Add mesclun, fennel and orange to bowl with dressing; toss gently to combine.
5.Place salad on serving platter; top with figs.

6.Place ingredients in screw-top jar; shake well, season to taste.
