Method
1.Preheat oven to slow, 150°C. Lightly grease and line 2 oven trays with baking paper.
2.In a medium bowl, combine oats, flour, coconut and sugar.
3.In a small saucepan, combine butter and syrup. Stir over a low heat for 2-3 minutes, until melted.
4.In a small jug, combine water and soda. Stir into butter mixture. Pour into dry ingredients. Mix well.
5.Roll tablespoons of mixture into balls. Arrange on prepared trays, 4cm apart (to allow room for spreading). Flatten gently with fingertips or a fork.
6.Bake for 15-20 minutes for chewy biscuits or 20-25 minutes for crisper ones. Cool on trays for 5 minutes before transferring to a wire rack to cool completely. Store in an airtight container.
