Method
1.Preheat the oven to 180°C (160°C fanbake). Grease a 12-hole loaf or friand tray.
2.Sift the icing sugar, rice flour and ground almonds into a large bowl.3 Make a well in the centre and mix in the egg whites, melted butter and zest with a large whisk until just combined.
3.Spoon the mixture into the tray so that each hole is three-quarters full. Sprinkle the blueberries on top.
4.Bake in the middle of the oven for 20-25 minutes or until a skewer inserted into the centre of the friands comes out clean and the tops spring back when lightly touched.
5.Cool in the tray for about 10 minutes before transferring to a wire cooling rack.
6.To decorate, pipe mascarpone over the top and decorate with berries, dried orange segments and edible flowers.
