Method
1.Bring a large saucepan of salted water to the boil. Add octopus and bring back to the boil for one minute, then drain well.
2.Transfer octopus to a large bowl. Add oil, garlic, chilli and zest, tossing well.
3.Preheat a char-grill or barbecue plate on high. Cook octopus for 2-3 minutes, until just cooked through and tender.
4.Transfer octopus to a large serving bowl. Toss with coriander and juice. Top with extra coriander leaves to serve, if desired. Serve with lemon wedges and crusty bread.
Overcooking octopus causes it to become tough and chewy.
Note
