Method
1.Combine bacon, corn, flour, egg, milk and chives in a bowl. Season.
2.Heat oil in a non-stick frying pan over moderate heat. Drop heaped tablespoons of mixture into pan. Cook fritters, in batches of 4, for 2 minutes each side or until golden and cooked. Transfer fritters to a heatproof plate to keep warm.
3.Fill each pita pocket with fritters, avocado and salad, then top with tzatziki. Serve.
Add 50g crumbled feta or grated tasty cheese to the batter before cooking.
