Ingredients

Avocado salsa

Method

1.Heat half the oil in a large frying pan on medium heat. Saute capsicum, onion and garlic for 3-4 minutes, until tender. Add the cumin and cayenne and cook, stirring, for 1 minute.
2.Place 6 tortillas on a clean bench and top each with 1/4 cup cheese. Top evenly with capsicum mix, turkey and another 1/4 cup of the cheese. Cover each with one of the remaining tortillas.
3.Heat 1 teaspoon oil in a large frying pan on medium heat. Cook the quesadilla one at a time, for 2-3 minutes each side or until golden.
4.Remove from the pan and cover to keep warm. Repeat with remaining quesadillas and oil.
5.AVOCADO SALSA: Meanwhile, in a small bowl, combine all ingredients. Season to taste.
6.Cut quesadillas into wedges to serve. Accompany with avocado salsa.

You can use leftover ham or another meat of your choice in the quesadillas. Cook these just before serving. If preferred, you can use a prepared guacamole dip to accompany the quesadillas.
