Step 1
In a bowl, whip cream, sugar and vanilla until soft peaks form.
Step 2
Spread a layer of whipped cream on two slices of bread.
Step 3
Place two whole mandarins in the centre of each bread slice, then spread more whipped cream all around the mandarins to fully coat them.
Step 4
Top with another slice of bread and gently press down. Wrap in cling film and refrigerate for 10 minutes.
Step 5
Slice in half to reveal mandarins inside. Serve immediately.
