Pork rack with apple sage sauce

Method

1.Preheat oven to 220ºC/200ºC fan-forced.
2.Rub pork rind with half the oil then the salt. Stand pork in medium baking dish; roast, uncovered, about 35 minutes or until rind is blistered.
3.Place vegetables in baking dish with pork, drizzle with remaining oil. Reduce oven temperature to 180ºC/160ºC fan-forced; roast pork and vegetables, uncovered, about 40 minutes or until pork is cooked through. Remove pork from dish; cover to keep warm.
4.Increase oven temperature to 220°C/200°C fan-forced; roast vegetables a further 15 minutes.
5.Meanwhile, make apple sage sauce. Peel and core apples; slice thickly. Place apple, the water and sage in medium saucepan; simmer, uncovered, about 10 minutes or until apple is soft. Remove from heat, stir in sugar.
6.Serve pork with vegetables and apple sage sauce.
