Parmesan-crumbed chicken wings

Put an Asian twist on baked chicken with Japanese breadcrumbs. Serve this succulent chicken with a wedge of lemon and zesty salad for a nutritious meal everyone will enjoy.

Method

1.Preheat oven to 200°C/180°C fan-forced. Season egg with salt and pepper. Combine breadcrumbs, parmesan and herbs in a large bowl. Dip chicken, one wing at a time, into egg; let excess drain. Dip into breadcrumb mixture; press to coat evenly. Place on a large baking tray. Spray chicken with oil.
2.Bake for 45-50 minutes or until golden brown and cooked. Serve with salad and lemon wedges.

These are great in lunch boxes and for picnics. For spicy wings, add a pinch of chilli powder to the breadcrumbs. Dried Japanese breadcrumbs are also known as panko; they’re available from most supermarkets and Asian grocery stores. You can use regular dried packaged crumbs; texture may vary slightly.
