Method

1.Preheat oven to 220°C (200°C) fan-forced. Grease two baking trays.
2.Melt butter in a medium saucepan over moderate heat. Add flour; cook and stir for one minute. Gradually stir in milk until smooth; cook and stir for 3-4 minutes or until sauce boils and thickens. Stir in spinach and half the cheese. Cool for 10 minutes. Stir in salmon, onion and capers.
3.Place bread out-side up on prepared trays. Spoon salmon mixture over bread, then sprinkle with remaining cheese. Bake pizzas for 10-12 minutes or until bases are crisp. Serve sprinkled with dill.

Makes 4 Use 1 cup bought bechamel sauce; you will find it in the chilled section of the supermarket. Try this topping as a filling in filo pastry.
