Greek lamb skewers

Perfect served with a fresh side salad or passed around as finger food at a barbecue, these Greek lamb skewers are a sure-fire crowd pleaser. Threaded with baby chat potatoes, onions, capsicum and sprinkled with crumbled feta and fresh oregano, these skewers are grilled to perfection.

Ingredients

Method

1.Place potato in a medium saucepan, cover with cold water. Bring to the boil. Boil 10 minutes or until just tender. Drain. Cool slightly.
2.Thread lamb, potato, onion and capsicum onto 12 skewers. Place skewers on a baking tray.
3.Preheat a barbecue grill or large char-grill pan over moderate heat. Combine garlic, oregano and oil in a small jug. Season. Drizzle over kebabs, turn to coat. Sprinkle with rosemary, turn to coat.
4.Add skewers to barbecue. Cook and turn 12-15 minutes, or until browned and lamb is cooked to your liking. Transfer to a serving plate. Thread an olive at the tip of each skewer. Sprinkle with feta and extra oregano. Serve with salad.
