Method
1.Combine cornflour, sesame oil and five spice powder in a shallow glass dish.
2.Add pork; toss to coat. Cover with plastic wrap; chill 10 minutes, to marinate.
3.Place noodles in a colander. Rinse with hot water to separate strands; drain well.
4.Combine soy sauce, hoisin and stock in a small jug.
5.Heat a wok or large frying pan over moderately high heat. Add oil; swirl to coat surface.
6.Stir-fry pork mixture, in batches, 2-3 minutes each batch, or until cooked. Transfer to a heatproof plate.
7.Add ginger and choy sum to wok; stir-fry 2 minutes, or until choy sum is bright green.
8.Return pork to wok with sauce mixture and noodles; toss until heated. Serve at once.
Marinate pork for longer if time permits.
