1.Heat half of oil in a wok or large frying pan on medium. Stir-fry pork, in batches, 1-2 minutes, until browned. Transfer to a bowl.
2.Add remaining oil to wok and heat. Stir-fry onion, carrot and celery, 2-3 minutes, until softened. Add pork and beans and stir-fry, 2-3 minutes, until beans are just tender.
3.Whisk together sweet chilli sauce, fish sauce, lime juice and sugar. Add to wok and stir-fry, 1-2 minutes, until heated through. Remove from heat.
4.Add peanuts and coriander, toss to combine. Serve with rice and extra coriander, if you like.
