Method
1.Cook cauliflower in boiling water 2-3 minutes, or until just tender; drain.
2.Sift flours and curry powder into a large bowl, adding husks from sieve. Make a well in centre. Whisk eggs and milk in a jug; add to flour mixture, whisking until smooth. Stir in cauliflower, chilli and green onion.
3.Heat 1 teaspoon of oil in a large frying pan over moderate heat.
4.To make each fritter, place 1/2 cup mixture into pan; flatten slightly. Cook 1-2 minutes each side, or until golden and crisp. Drain on paper towels. Add more oil and reheat pan between batches when necessary.
5.Serve fritters with pappadums and baby rocket.
