Method
White bean & tuna salad
1.In a large bowl, combine tuna, beans, tomatoes, onion, cucumber, spinach and parsley.

2.In a small jug, whisk all the ingredients together. Season.
3.Pour dressing over salad and toss gently. Serve sprinkled with pumpkin seeds.
If you like, include mint leaves and carrot or capsicum sticks – they’ll add minimal kilojoules.
