A classic Italian pasta dish that is loved by all, this meat and tomato based sauce is beautiful tossed through perfectly cooked spaghetti for a quick and easy family dinner.

Method

Spaghetti bolognaise

1.Heat oil in a large saucepan over moderate heat. Cook and stir onion, garlic and bacon for 3-4 minutes. Stir in celery; cook and stir for 2 minutes more.
2.Add mince; cook, stirring with a wooden spoon to break up lumps, for 5 minutes or until browned. Stir in stock, tomato, paste and bay leaves. Bring to the boil. Reduce heat; simmer, uncovered, stirring occasionally, for 30 minutes or until sauce thickens. Remove bay leaves.
3.Meanwhile, cook pasta in plenty of salted boiling water for 10-12 minutes following packet instructions, or until tender but firm to the bite; drain.
4.Place pasta in serving bowls, spoon meat sauce over, top with parmesan. Serve.

Budget tip: Make a double batch of bolognaise sauce. Freeze for up to 3 months. Use in soups, on potatoes or on pizzas.
